Pink Swirl KitKat Brownie Recipe

July 29, 2018

After spending 20 minutes drooling over ItsLittleLaurens cupcake and brownie pictures, I thought I’d try to make some of my own pink brownies. These are essentially dark chocolate brownies but made a bit special with a pink chocolate swirl over the top with kit kat and twix – a chocaholics dream!ff27e8d0-3630-4652-bbff-076ccbca8df4

  • 145 grams unsalted butter
  • 250 grams granulated sugar
  • 80 grams cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large cold eggs
  • 65 grams plain flour

For the Topping:

  • 100g milk chocolate
  • 60g white chocolate
  • pink food colouring
  • 3-5 KitKats
  • 3-5 Twix
  • Freeze-dried rasberriesb34da6a8-2ccc-4910-8d86-a07b4a7d7465

  1. Preheat the oven to 180 degrees celsius and line a square baking tray with greaseproof paper.
  2. Heat up the butter, sugar, salt and cocoa powder over a pan of boiling water, making sure the bowl doesn’t touch the boiling water. The mixture may look a bit lumpy but that will go when you start to add the eggs and flour.
  3. Stir in the vanilla extract and then eggs, one at a time, and whisk until smooth and shiny.
  4. Then, fold in the flour until well combined before pouring into the prepared baking tray. Pop in the oven for around 25 minutes until a toothpick can be put in the middle and come out clean.
  5. Once the brownies are cooked and cooled completely, melt the milk chocolate(I did it in the microwave). I then used a spatula to spread it evenly over the brownie. Whilst I was doing that, I put the white chocolate in the microwave until it completely melted. I then added the pink food colouring and placed a blob in the middle of the milk chocolate. I then used a toothpick to swirl it in until I was happy with how it looked. I then broke bits of KitKat and Twix over the brownie and sprinkled freeze-dried rasberries over the brownie. I then popped it into the fridge so the chocolate hardened.
