After spending 20 minutes drooling over ItsLittleLaurens cupcake and brownie pictures, I thought I’d try to make some of my own pink brownies. These are essentially dark chocolate brownies but made a bit special with a pink chocolate swirl over the top with kit kat and twix – a chocaholics dream!
Ingredients:
- 145 grams unsalted butter
- 250 grams granulated sugar
- 80 grams cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large cold eggs
- 65 grams plain flour
For the Topping:
- 100g milk chocolate
- 60g white chocolate
- pink food colouring
- 3-5 KitKats
- 3-5 Twix
- Freeze-dried rasberries
Recipe:
- Preheat the oven to 180 degrees celsius and line a square baking tray with greaseproof paper.
- Heat up the butter, sugar, salt and cocoa powder over a pan of boiling water, making sure the bowl doesn’t touch the boiling water. The mixture may look a bit lumpy but that will go when you start to add the eggs and flour.
- Stir in the vanilla extract and then eggs, one at a time, and whisk until smooth and shiny.
- Then, fold in the flour until well combined before pouring into the prepared baking tray. Pop in the oven for around 25 minutes until a toothpick can be put in the middle and come out clean.
- Once the brownies are cooked and cooled completely, melt the milk chocolate(I did it in the microwave). I then used a spatula to spread it evenly over the brownie. Whilst I was doing that, I put the white chocolate in the microwave until it completely melted. I then added the pink food colouring and placed a blob in the middle of the milk chocolate. I then used a toothpick to swirl it in until I was happy with how it looked. I then broke bits of KitKat and Twix over the brownie and sprinkled freeze-dried rasberries over the brownie. I then popped it into the fridge so the chocolate hardened.
